They body dolly you describe seems like more work than is necessary for the body dolly. That said, I haven't seen the plans so I can't comment with certainty.

The dolly I built worked very well and it only took me an afternoon to build. Here's the dolly plans I used:

As you can see in the photo below I simplified the details a fair bit. I just didn't think it was worth spending an entire weekend building it. The only thing I would do different would be to add the middle set of casters as shown in the plans. I left those out to save money but they would have been good to have. The dolly was fine without them, but it ended up being a bit bouncy.

I don't think it's necessary to support the body at each body mount location. Here's what
